3/4 lb butter
5 c diced onion
1 c parsley, chopped
3 tbs salt
1 tsp Louisiana Hot Sauce
2 tbs lemon juice
4 lb peeled shrimp
2 tbs Worcestershire Sauce
Cook onion in butter until clear, you will need 10-12 coals depending on the outside temperature. Add parsley, salt, lemon juice, hot sauce and Worcestershire sauce and simmer 5 min. Add shrimp, cover and simmer until shrimp turns pink and are done. You might have to remove a couple of coals to simmer instead of boil at this point.

Is it possible to be addicted to camping?
When I get back from a trip I think about all the fun we had, the solitude and quietness I enjoyed while there and write up several trip reports about what we experienced.
I begin getting ready for the next trip weeks before we go, I plan the menu, I plan the activities, I research the campground, I spend time cleaning and preparing my gear and in general just begin "anxiously awaiting" the time when we can leave.

8 chicken breasts, de-boned
6 tbs peanut oil
2 tbs lemon juice
2 tbs thyme
Salt, pepper
8 slices of boiled ham
8 slices of swiss cheese
Cut foil into 12" squares, place chicken in center. Combine oil, lemon juice, thyme and mix well. Spoon over breasts. Seal foil well and place on hot bed of coals. Bake for about 30 min. until chicken is cooked through. Open foil and place one slice ham and swiss cheese over each breast. Bake open for 3 to 5 min until cheese melts a little. Remove from foil and place on serving platter.
